Hickory Bird was born from an obsession for food and home cooking, and the desire to create a neighborhood restaurant that provides delicious, high quality food to families.
The heart and soul of Hickory Bird is our 2-step “smoke-roasted” process. Marinated for 24 hours in our secret spice blend, it’s then smoked, “slow-and-low,” with hickory and apple wood, and oven-roasted to perfection. The result is a juicy, smoky, deeply flavored chicken.

We’re more than chicken. Our barbecued pork is a whole, bone-in pork shoulder that is given the same amount of care. We marinate for 24 hours in our seasoning blend and then smoke it, “slow-and-low,” with hickory and apple wood for 12 hours. It’s then chopped and tossed in our homemade sauce. BBQ pork done right.
